Recipe 1: Quinoa and Vegetable Power Casserole

Ingredients:

  • 1 cup quinoa, cooked

  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)

  • 1 cup black beans, drained and rinsed

  • 1 cup corn kernels

  • 1 cup shredded cheddar cheese

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Fresh cilantro for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, mix together cooked quinoa, mixed vegetables, black beans, corn, and shredded cheddar cheese.

  3. Add cumin, paprika, salt, and pepper. Mix until well combined.

  4. Transfer the mixture into a casserole dish and spread it evenly.

  5. Bake for 25-30 minutes or until the edges are golden brown.

  6. Garnish with fresh cilantro before serving.


Recipe 2: Chicken and Broccoli Protein Casserole

Ingredients:

  • 2 cups cooked chicken breast, shredded

  • 2 cups broccoli florets

  • 1 cup brown rice, cooked

  • 1 cup Greek yogurt

  • 1 cup chicken broth

  • 1 cup shredded mozzarella cheese

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine shredded chicken, broccoli, brown rice, Greek yogurt, chicken broth, mozzarella cheese, minced garlic, salt, and pepper.

  3. Mix until all ingredients are well incorporated.

  4. Transfer the mixture to a casserole dish and spread it evenly.

  5. Bake for 30-35 minutes or until the top is bubbly and golden.

  6. Garnish with chopped parsley before serving.


Recipe 3: Sweet Potato and Turkey Casserole

Ingredients:

  • 2 cups sweet potatoes, peeled and cubed

  • 1 pound ground turkey

  • 1 cup spinach, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cup feta cheese, crumbled

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • Fresh basil for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Boil sweet potatoes until tender. Drain and set aside.

  3. In a skillet, cook ground turkey until browned. Season with oregano, garlic powder, salt, and pepper.

  4. In a large bowl, combine sweet potatoes, cooked turkey, chopped spinach, cherry tomatoes, and feta cheese.

  5. Transfer the mixture to a casserole dish and spread it evenly.

  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.

  7. Garnish with fresh basil before serving.
